My friend Amber came up with the original recipe (which uses orange cinnamon suero viv) and I critiqued it a bit by adding orange essential oil and citrus suero. Enjoy.
4 cups of organic fresh cranberries
6 pitted dates
1 cup citrus suero viv
2 drops orange essential oil
Pulse all ingredients in a vita mix until well combine and finely chopped.
Let it ferment/sit out on the counter, overnight.

Hi Kelcie - I met you last night at Erin's fermenting foods workshop. Just a couple questions on the cranberry recipe. How many jars does the above recipe fill? And, do we really only need to let it sit overnight? Is it better if it sits longer? Thanks for your help!
