Stuffed Peppers

From the kitchen of: Kelcie

Grain Free Stuffed Peppers

3 medium red/green peppers
1 lb. grass-fed ground beef (precooked)
3/4 cup raw cheddar cheese
1/2 cup organic tomato paste
3 cloves of garlic (minced)
salt and pepper
ghee (to grease the pan)

Heat oven to 400 degrees.
Grease cookie sheet with coconut oil or ghee (both are good for high heat).
Cut tops off the peppers, place both the tops and the rest of the pepper upside down on the greased cookie sheet (opposite of the picture) .
Cook them in the oven for 10-15 minutes until they are softish.
Take out and let it cool.
Turn heat down to 350 degrees.
In a mixing bowl combine beef, tomato paste, cheese, garlic, salt and pepper together.
Stuff the peppers, then put the top of the peppers on them (like a little hat).
Cook for 10-15 minutes.
