Mint Chocolate Chip Ice Cream

Mom's favorite!

Low sugar High nutrient dense dessert! :) Got to love that!

2 cups raw homemade almond milk
1/4-1/2 cup raw honey
6 drops stevia extract (optional)
6 drops peppermint essential oil (I only would recommend young living)
1 tsp. pure vanilla
dark chocolate pieces with flaxseeds

Blend all ingredients except the chocolate chunks. Pour into your ice cream maker. Add in the chocolate chunks and serve.


Healthy Grain Free French Toast

Yep healthy french toast! No grain, dairy, sugar or soy!

Its packed with protein, great source of good fats including medium chain fatty acids and omega 3 fatty acids.

Grain Free Yummy French Toast

2 slices of grain free coconut bread 
1 organic farm fresh egg
1/4 cup organic raw coconut nectar or grade B maple syrup
1/2 tsp. pure vanilla extract 
sprinkle of cinnamon and nutmeg 
2 tbsp. organic grass-fed butter

Whisk egg, nectar/syrup, vanilla and spices together. Soak bread until most of the liquid is absorbed in the bread. In frying pan add butter and heat pan at low to medium heat until butter is melted. Add bread into pan and cook for 10-12 minutes!

Yummo! :)


Frozen Yogurt

10 grams of protein, 11 grams or healthy fat, omega 3's, CLA, calcium and probiotics. Per serving (3 scoops).

1 bottle Plan Amasai
1 ripe banana
1 tsp. pure vanilla
1 tbsp. honey (optional)
chocolate chunks with flaxseeds

Pour ingredients (except for the chocolate) in the blender.
Place in your ice cream maker.
Stir in chocolate cunks and serve.


Raspberry Frozen Yogurt

10 grams of protein, 11 grams of healthy fats, CLA, omega 3's, calcium and probiotics!
1 bottle Raspberry Amasai
1 cup frozen raspberries
chocolate chunks (optional)

Place amasai and berries in blender and blend well!

Pour into your ice cream maker.
Stir in chocolate chunks.

Variations:

Grain Free Pound Cake


Plain Loaf

6 eggs
1/2 cup of suero gold
2 tbsp. honey
3/4 cup organic 100% grass fed butter, melted ( coconut oil or ghee)
1 tsp. sea salt
1/2 cup organic coconut flour
1 tsp. baking powder

Combine wet ingredients together in a large bowl and whisk well. Add in remaining ingredients until well combined. Let it sit for 5 minutes to thicken. Heat oven at 325 degrees and bake for 20-30 minutes.

NOTE: Batter Should Look Like
If it doesn't, add more water.


Variations:

Almond Loaf

6 organic free range eggs
1 cup organic grass-fed butter, coconut oil or ghee melted
4 tbsp. organic honey 
10 drops sweet leaf stevia extract
3/4 tsp. pure almond extract 
1 tsp. vanilla extract
1/2 tsp. sea salt
1/2 cup suero gold
1/2 cup organic coconut flour
1 tsp. baking powder


Blend together eggs, butter/ghee, honey, stevia, almond extract, suero gold and salt. Add in coconut flour and baking powder, whisk thoroughly into batter until there are no lumps. Pour into greased loaf/bread pan. Bake at 325 degrees for 20-30 minutes. Let it cool for 45-60 minutes before serving. 

NOTE: Batter Should Look Like
If it doesn't add more water.

Lemon Loaf

6 organic free range eggs

1 cup organic grass-fed butter, coconut oil or ghee melted
4 tbsp. organic honey
10 drops sweet leaf stevia extract
7 drops lemon essential oil
1/2 tsp. sea salt
1/2 cup suero gold
1/2 cup organic coconut flour

Blend together eggs, butter/ghee, honey, stevia, lemon essential oil, suero gold and salt. Add in coconut flour and baking powder, whisk thoroughly into batter until there are no lumps. Pour into greased loaf/bread pan. Bake at 325 degrees for 20-30 minutes. Let it cool for 45-60 minutes before serving. 


NOTE: Batter Should Look Like
If it doesn't add more water.

Grain Free Cinnamon "Sugar" Cookies

These are fantastic! One of my favorites!  They are great for around Christmas time and go wonderful with tea or hot cocoa!

Cinnamon "Sugar" Cookies


4 organic farm fresh free range eggs
3/4 cup xylitol
1/2 tsp. pure vanilla
1/4 tsp. sea salt
1/2 cup organic grass-fed butter/ghee, melted
3/4 cup organic coconut flour
2 tsp. cinnamon
1 tbsp. xylitol (powdered, in coffee bean grinder)


Combine eggs, xylitol, vanilla, salt and butter and mix well. Stir in coconut flour. Let batter rest for 5-7 minutes, to thicken. In separate little bowl combine cinnamon and tbsp. of xylitol together. Form dough into little balls and roll around in the cinnamon and xylitol. Place on cookie sheet and press balls down. bake at 375 degrees for 15 minutes. Makes around 24 cookies.

Yummy Fall Salad

I made up this recipe the other night!

My mom said she wanted a salad and we only had a few things in the fridge, so I found some frozen raspberries, few green onion and some other things and began making the dressing! It kinda took off from there.


Fall Salad


1 head of romaine lettuce, chopped
1 organic apple, chopped
1/4 cup raisins (optional)
All natural organic goat cheese, or feta


Spiced Nuts
1 cup raw pecans
1/4 cup maple syrup 
1/2 tsp. cinnamon 
pitch of sea salt


In large bowl mix ingredients together. Pour nuts onto a cookie sheet and spread out so there is one layer of nuts. Bake at 300 degrees for 5 minutes. Take out and place in fridge for 30 minutes. Place desired amount of nuts on salad.


Tangy Raspberry Dressing
1 cup fresh or frozen raspberries
5-6 green onions
1/2 cup raw apple cider vinegar 
2 tbsp. of water
1 tsp. liquid stevia
1 1/4 cup cold press walnut oil


Place all ingredients into a blender. Blend well.

Grain Free Crackers

Grain Free Crackers

3 cups almond meal or flour
2 organic eggs
2 tbsp. melted coconut oil
1 1/2 tsp. sea salt
1 tbsp. garlic powder

Combine all ingredients in a bowl. Pre heat oven to 350 degrees. Role dough out on parchment paper placing another piece of parchment paper on top and place in a pan! Dough should be 1/8 inch thick.

Bake for 20 minutes. Take out and remove parchment paper. Cut into squares with a pizza cutter and place back into the oven for 10 minutes! Serve with guacamole or organic greek yogurt.

Grain Free Cinnamon Raisin Bread

Grain Free and Dairy Free Cinnamon Raisin Bread
½ cup coconut flour
1 teaspoon celtic sea salt
1 teaspoon baking soda
1/2 tsp. cinnamon
5 eggs
½ cup coconut oil (melted)
½ cup agave nectar
1 tablespoon vanilla extract
1 cup raisins
½ cup walnuts, chopped
  1. In a medium bowl combine coconut flour, salt, baking soda and cinnamon
  2. In a large bowl blend eggs, grapeseed oil, agave and vanilla
  3. Blend dry ingredients into wet, then fold in raisins and walnuts
  4. Pour batter into a greased 8.5 X 4.5 X 2.5 inch loaf pan
  5. Bake at 350° for 50 minutes
  6. Cool and serve


Dairy Free Caramel

Caramel Apples
1 cup grade B maple syrup
1 ¼ cups coconut cream
½ teaspoon celtic sea salt
apples, sliced, for dipping
  1. Heat syrup in a saucepan until tiny bubbles form around the edges --a very low simmer
  2. Continue heating agave this way for 8 minutes (reduces water content of the syrup)
  3. Add coconut cream and salt, then bring mixture to a boil
  4. Reduce heat to an active simmer, continue to simmer actively for 10 minutes :-) Whisking every now and then.
  5. Remove mixture from heat when the caramel reaches a darker nutty color
  6. Place saucepan in fridge and let it cool and thicken for 2-3 hours
  7. Place a large bowl of apple slices on the table

Grain Free Chocolate Chip Cookies

My Brother is a HUGE chocolate chip cookie guy! Yah, HUGE. Well these are now his FAVORITE chocolate chip cookies! :) My whole family likes them as well! So if you have picky eaters start them out with this and they will soon realize that eating healthy can taste amazing! 


Chocolate Chip Cookies

  1. Combine dry ingredients in a large bowl
  2. Stir together wet ingredients in a smaller bowl
  3. Mix wet ingredients into dry
  4. Form 1-inch balls and press onto a parchment paper lined baking sheet
  5. Bake at 350° for 7-10 minutes
  6. Cool and serve
Makes 24 cookies

Steak and Faux-tato Dinner

I made up this recipe last night for my mom! :) It was YUMMY! 

Steak and Mashed Faux-tatoes

Steak
1 large grass-fed steak tenderloin
2 cups red wine
1/2 cup grass-fed organic butter/ghee
1/2 tsp cumin
pinch of sea salt

Place steak in a medium sauce pan with all ingredients. Cover and let it cook on low for 35-45 minutes (depending on how well you like your steak done). After steak is cooked pour juice into a separate bowl leaving only a very little bit in the pan and set aside. Char the steak for 5-7 minutes. Remove and slice on a plate.



Gravy
Juice
3 tbsp. coconut flour

Pour juice back into the pan on low and whisk every couple minutes. In a cup combine coconut flour with water until you make a smooth thick paste. Gradually add the paste to the juice and whisk vigorously. Let it simmer for 10-15 minutes and continue whisking.

Faux-tatoes
2 large cauliflower heads
1/2 cup of grass-fed butter/ghee
sea salt

Steam cauliflower until tender (35-40 minutes). Place cauliflower, butter and salt to taste into a vita mix or powerful blender and blend well!

The Most Yummy Guacamole

I made up this guacamole recipe as well! And it is VERY yummy! :)

Homemade Flu Fighting Guacamole

2 ripe avocados
2 cloves of garlic
1/4 cup fresh lemon juice
1/2 tsp. sea salt
1/4 tsp. black pepper
1/4 tsp. cayenne pepper

Place all ingredients in vita mix or blender and blend until smooth!

This recipe is packed with nutrients as well as all my other recipes, but this one is fantastic if you are fighting a cold or a sickness because of garlic being a natural antibiotic and cayenne being REALLY high in vitamin C this is a great recipes for if you are sick!

This also makes a great baby food! And everything in here is safe for little ones that are able to eat baby or solid food! The cayenne may be a little to strong for them but it shouldn't hurt them! This recipe will work just as well with the garlic and no cayenne for them though!

The most amazing chocolate sauce EVER!

I made up this recipe the other day! It turned out beautifully! :)

Homemade Best Ever Chocolate Dipping Sauce


1/3 cup coconut oil
1/2 cup coconut milk
1/3 cup raw cacao powder
1 tsp. liquid stevia (sweet leaf brand is the best, and if you don't have sweet leaf just use 1/4 cup raw agave)
1/2 tsp. vanilla extract

Place coconut oil in a small sauce pan at a low heat and let it melt completely. Add the coconut milk and stir those two together until creamy and smooth. Whisk in the cacao powder until smooth. Add the stevia/agave and vanilla. Whisk all ingredients together. Turn off stove and let that cool for 30 minutes. Scoop out and it should look like the picture, think and creamy!
