Grain Free Chicken Salad SANDWICH

This recipe is packed with nutrients, but it also has an amazing taste! 

Chicken Salad Sandwich


2 ORGANIC free range chicken breasts
3 Tbsp. coconut oil mayonnaise
1/4 cup raisins/grapes
1/2 cup chopped raw pecans
1/4 cup chopped celery 


Variations:
1/2 cup chopped apples
2/3 cup chopped raw walnuts


Shred chicken breast. Add mayo and mix well. Add remaining ingredients and serve on grain free bread (recipe bellow).

Grain Free Scrumptious Sandwich Bread


3/4 cup unsalted creamy roasted almond butter (at room temp)
4 large organic free range eggs
1/4 cup blanched almond flour
1/4 cup arrowroot powder
1/2 tsp. sea salt
1/2 tsp. baking soda 
1 tbsp. ground flax meal


Preheat oven to 350 degrees. Grease a 7 by 3-inch loaf pan with coconut oil and dust with almond flour. In large bowl mix almond butter with hand mixer until smooth, then blend in eggs. In medium bowl, combine dry ingredients together. Blend the dry ingredients into the wet ingredients until thoroughly combined. Pour batter into loaf pan and bake for 40-45 minutes on the bottom rack of the oven until knife inserted into the middle of the loaf comes out clean. Let it cool for 1 hour.
