Raw Dairy Free Mango Ice Cream

Raw Dairy Free Mango Ice Cream

1 can organic coconut milk (full fat)
2 mango peeled (cut out the pit of course)
1/2 banana
2/3 cup chopped pineapple

Blend in vita mix until smooth.
Place in ice cream maker for 30 minutes.
Place in freezer for 1 hour.

Raw Stuffed Peppers

Raw Stuffed Peppers

4 medium organic red peppers
3 large ripe avocados
1/4 cup red onion chopped
2 cloves of garlic minced
3 tbsp. coconut oil mayonnaise
2 tbsp. fresh squeezed lemon juice
2 wild salmon fillets
2 tbsp. organic grass-fed butter/ghee
pinch of sea salt

Place butter/ghee in a frying pan on low heat.
Place salmon on the pan and cook until done.
Sprinkle with sea salt and allow it to cool.
Scoop avocados into a vita mix or blender allow with, coconut oil mayonnaise (if coconut oil mayo was not fresh then set out 3 hours in advance to allow to soften), lemon juice and garlic.
Mix ingredients until smooth.
Pour guacamole into a bowl and mix with onions and salmon.
Spoon mixture into peppers and serve.

Variations: Use chicken instead of salmon, or another type of fish.

Irish Soda Bread

Irish Soda Bread

2 1/2 cups blanched almond flour
1/4 cup coconut flour
1 1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. sea salt
1/2 cup organic raisins
2 large eggs
2 tbsp. apples cider vinegar
2 tbsp. honey

Blend dry ingredients together (including the raisins) in a large mixing bowl.
Whisk wet ingredients in a medium bowl until well combined.
Add wet ingredients to dry ingredients.
Set for 3-4 minutes to thicken.
On a piece of parchment paper form bread into large "ball" and then press down just a little.
With a knife make a cross on the top of the bread.
Preheat oven to 325 and bake for 20 minutes.
Turn oven off and leave in oven for 10 minutes.

Spring Salad

Spring Salad

2 cups chopped organic lettuce (romaine)
1/2 cup organic cucumber chopped (leave skin on, it has vitamins)
1 avocado
1/4 cup chopped red onion
1/4 cup dehydrated organic zucchini (it has a whole other taste when you dehydrate it so fresh wont due)
3 dehydrated organic tomato slices
4 oz. free range chicken (pre-cooked)
1/2 cup pine nuts, walnuts or pecans (optional)
2 oz. really raw havarti cheese  

Italian Salad Dressing

1/2 cup organic red wine vinegar
1/3 cup organic cold pressed olive oil
2 cloves of garlic
6 drops stevia
1 tsp. stone ground mustard
1/2 tsp. sea salt
sprinkle of black pepper
1 tsp. organic basil and oregano

Blend together and pour over salad

Chocolate Banana Cupcakes

1 1/2 cup blanched almond flour
1/4 cup organic cocoa powder
1 tbsp. ground chia seeds
1 tbsp. ground flax seeds
1 tbsp. arrowroot powder
1/2 tsp. baking soda
1 banana
1/4 cup honey
1/4 cup organic coconut milk
1 tbsp. pure vanilla extract

Raw Cream Cheese Frosting

High in omega 3's, CLA, Probiotics, protein, vitamin K2, and low in sugar!

Cream Cheese Frosting

1 cup cream cheese 
2/3 cup soften butter or ghee 
1 tsp. pure vanilla extract
1/4 cup powdered xylitol (powdered in a coffee bean grinder)

Mix ingredients together.

Cinnamon Buns with Cream Cheese Frosting

Cinnamon Buns

1 cup blanched almond flour
2 tbsp. coconut flour
1/2 tsp. baking soda
1/4 tsp. sea salt
1/4 cup coconut oil (melted)
1/4 cup grade B maple syrup  (it's less processed and lower in sugar)
3 free range eggs
1 tbsp. pure vanilla extract

Combine dry ingredients together in a large bowl.
Combine wet ingredients together in separate mixing bowl.
Add wet ingredients to the dry ingredients and mix well.
Scoop batter into muffin pan and top with cinnamon topping.

Cinnamon Topping

2 tbsp. maple syrup
1 tbsp. melted ghee
1 tbsp. organic ground cinnamon

Mix together and pour over muffins.

Bake at 350 for 7-10 minutes (maybe longer).

Top with Cream Cheese Frosting

Raw Apple Sauce

Raw Apple Sauce

6-8 organic apples
1 tsp. cinnamon
1 tsp. fresh raw lemon juice

Chop apples and place them in a bag with cinnamon and lemon juice (the lemon and cinnamon act as preservatives) and place in freezer for tow days.
Defrost for a day.
Place in a powder blender (I used my vita mix) and blend until it reaches apple sauce consistency.

 

Raw Apple Crisp

Raw Apple Crisp

2 organic apples
1 tbsp. organic ground cinnamon
1/2 tsp. organic nutmeg
1/2 tsp. fresh squeezed lemon juice (half a lemon)
1/4 cup raw pecans
1/3 cup ground flax (freshly ground in a coffee bean grinder)
1 tbsp. raw honey (optional)

Chop two apples and place in a plastic bag in freezer over night.
Defrost apples for a day or so until they are no longer frozen.
Apples will now be soft (as if you baked them).
Add in remaining ingredients and mix together.
If desired you can set your oven to 200 or 250 and slightly warm for not even 2 minutes (I don't but it's optional).

Tropical Fruit Kabobs

Mini Tropical Fruit Kabobs

1 mango (peeled and cut into cubes)
2 cups of freshly cut pineapple (cute into cubes)
2 kiwis (peeled and cut into cubes)
2 oz. raw cheese
10 tooth picks

Put fruit onto tooth picks and serve raw cheese on the side.


Cucumber Sandwiches

Cucumber Sandwiches

1 organic cucumber
12 grain free wasa crackers (or another grain free cracker)
sprinkle of organic dill weed

Cream Cheese Dip

2/3 cup FRESHLY MADE coconut oil mayonnaise (of course use when it's done fermenting)
2 tsp. organic dill weed
sea salt to taste

Mix ingredients together until well combined. 
Use as a dip or make mini "sandwiches" out of them. 






Grain Free Basil Tomato Pizza

2 organic tomatoes
1 tsp. fresh organic basil
3 cloves of minced garlic

Add tomatoes, basil and garlic to grain free pizza.

Cinnamon Swirl Cream Cheese Toast

Cinnamon Swirl Cream Cheese Toast

2 tbsp. homemade cream cheese
2 tsp. organic ground cinnamon
2 tsp. powdered raw coconut sap/sugar (powder it in a coffee bean grinder)
2 slices of grain free sandwich bread

Cut two slices of bread.
Spread with cream cheese.
Add cinnamon and coconut sugar and spread until evenly distributed.

Raw Cream Cheese and Whey

1 bottle of plain green-fed Amasai

Pour amasai into a fine strainer lined with an unbleached cheesecloth.
Place strainer over glass bowl.
Leave over night for 8-12 hours.

Variations

Use raspberry amasai and make raspberry cream cheese!





Hotdog on a Bun

This turned out delicious! :)

1 beyond organic hotdog
1 grain free hotdog bun (double the recipe and shape into a hotdog bun)
healthy ketchup, organic mustard and homemade fermented relish.

Ketchup

1/2 cup organic sun dried tomatoes (soaked for two hours)
1/4 cup apple cider vinegar
1/4 cup raisins
2 tbsp. onion powder
1 tbsp. sea salt

Grain Free Pumpkin Spice Muffins

Pumpkin Spice Muffins

2/3 cup pumpkin puree (I made mine by freezing organic pumpkin, cooking it, blending it in my vita mix)
1/2 cup palm oil (coconut oil, ghee or butter would as well)
1/2 cup honey/grade B maple syrup or 1 cup pitted dates
1 tbsp. pure vanilla
4 large free range eggs
1/3 cup coconut flour
1 tsp. baking powder
1 tsp. organic ginger, organic cinnamon and organic nutmeg
1 tsp. sea salt

Blend puree, palm oil, honey, vanilla, eggs, salt and spices in a vita mix or blender until smooth.
Pour mixture into a large bowl and add flour and baking powder. 
Pour into a muffin pan and bake for 15 minutes at 325 degrees.
Serve with butter on top.



Grain Free Chocolate Chip Banana Bread

Chocolate Chip Banana Bread

1 really ripe banana
2 tbsp. honey (4 if you like it sweeter or just add 6 drops of stevia)
1/2 cup ghee or coconut oil (melted)
1/2 cup Suero gold
4 large free range eggs
1 tsp. pure vanilla
1/2 cup coconut flour
1/2 cup organic dark chocolate chips
1 tbsp. sea salt

Puree banana, honey, ghee/butter/coconut oil, vanilla, suero, and eggs together in a vita mix or blender.
Pour into a mixing bowl and add flour, salt and baking powder.
Fold in chocolate chips.
Pour batter into a loaf pan and bake at 325 for 30 minutes.
Serve with butter.





Honey BBQ Steak

Honey BBQ Steak

1 1/2 cup Sweet and Tangy BBQ sauce
1 large 100% organic grass-fed steak
2 tbsp. coconut oil or butter
sea salt, pepper and a pitch of cayenne (optional)

Marinade steak in BBQ sauce for 12 hours.
In a frying pan place oil/butter at a low-medium heat and let it melt.
Place steak with marinade in the pan and cover for 10 minutes.
Flip over and sprinkle with salt, pepper and cayenne and let it cook for about 10-25 more minutes or until you like it done.

This recipe is also FANTASTIC grilled.
