Lemon "Chia Seed" Muffins

1/4 cup coconut flour
1/4 tsp. sea salt
1/4 tsp. baking soda
3 free range eggs
1/4 cup honey
1/4 cup coconut oil, melted
4-5 drops lemon essential oil
1 tbsp. chia seeds

In a medium bowl combine coconut flour, salt and baking soda together.
In another bowl combine eggs, agave, coconut oil, lemon oil.
Combine wet and dry ingredients together, set aside for 2-3 minutes to thicken.
Fold in chia seeds.
Scoop into mini muffin pan and bake at 350 for 8-10 minutes.
